Can you create shortcuts for zoom in (+) and zoom out (-).

OR add them to the customisable list.

feature is available at https://github.com/helge17/tuxguitar/releases, since there is no more development going on here.
From pre-release 2023-10-26 you can configure shortcuts for "zoom in/out" actions.
Note: it's also possible to zoom in/out with (Ctrl+mouse wheel) or (Ctrl+2 fingers touchpad)
