I'm no expert with trinux, but I can answer one or two of your questions:

Type "bash" and press enter.  The you will be using bash rather than sh.
Advantages: tab completion (yay) and history (yay) - there are probably 
others, but I've used bash for so long, I couldn't really say what else sh 
is missing.

Commands like ls have been stripped down to make more room for "stuff" on 
the disk - the --color switch isn't absolutely necessary, so it's not 
here.  Don't quote me on this, but I think that ls under trinux is actually 
part of busybox, if you want to get a hold of it and recompile it with the 
--color switch.
