You can set volume for an individual sound patch in your timidity.cfg file.  
See "man timidity.cfg".

0      Acoustic_Grand_Piano.pat amp=360 pan=center

You can also edit your midi file and issue "0xBn 0x07 xx" volume controller 
message where n=part and xx=volume level from 0-127.
