Duh...

It's the "Mark entry as private" option...

For some reason, my mind was thinking along the lines of "postpone publication", and I never put 2 and 2 together that by first marking it as private and then unchecking it later on, I could achieve that goal.

Funny how small differences in wording can have a big effect!
