[file attributes -type -creator] sets the standard HFS+ creator or file type, same as the tool /Developer/Tools/SetFile for instance ( or other utilities such as BareBones' SuperGetInfo). If you set the creator of a pdf file to "CARO" it should open in Acrobat Reader. You should also be able to set the default application for files with .pdf extension to acrobat reader from the finder info window (via "Use this application to open all documents like this").
