You can set up a recurring task. The interval can depend on the completion date.

The Completion Date is set to the date and time when you tick the checkbox Completed.
That means, if you do not tick that checkbox right after the task is done but, let's say, one day later (because you did not sit in front of the computer when the task was completed), then the calculation of the next due date is wrong.
What about to make the field 'Completed on' changeable?
If you tick the checkbox Completed, the field will be filled with the current date and time (like today).
If you enter a date and time in the 'Completed on' field, the checkbox Completed will be marked.
If you change the value of 'Completed on' then the behavior should be the same like you would uncheck the checkbox Completed and then mark it again .. but the completion date time is what you have entered in the 'Completed on' field.
