I'm running the latest version of SH3D free on a macOS Big Sur Intel Macbook Pro. I'm finding the following issues:
1. Saving the plan to either OneDrive or a folder protected by iCloud results in the program freezing fairily quickly. I've worked through a drawing without saving for 30 minutes, but once I save to either of those folder types, it will freeze up as soon as I start working again. Saving to a folder not within OneDrive or iCloud works fine.
2. No matter where the file is saved, I cannot import zipped furniture files. Once it gets to the orientation part, it freezes up and I have to force quit. Same goes for non-zipped files.
Just to be sure, what do you call the "latest version"?
I didn't experience any import problem under Big Sur with version 6.5 on my side.

Version 6.5, just downloaded and installed today for the first time.
So I believe the issue of importing is directly tied to the 3d render it's trying to generate when showing different the views. I imported furniture libraries without any issues. I'm going to try this on my M1 Macbook Pro shortly and see if I have similar issues there.
Did you try with other 3D models?
Multiple 3D models from multiple sources, all the same result. I'm using Windows via Parallels for now and that's working fine. Will be trying it out on my M1 shortly, which is where I'd be doing the rest ideally.
Same issue on my Macbook Pro M1, also on Big Sur. Anything I can get for you?
Please check how it works when you add the following line in
[JavaOptions]
section of the fileSweetHome3D.cfg
found inSweet Home 3D.app/Contents/app
:java-options=-Dcom.eteks.sweethome3d.j3d.useOffScreen3DView=true
That makes it worse. Now as soon as I try and drag the window after startup, before even opening a file, it freezes. Reverting that change makes it work properly after launch (until I try and import something, of course).
I do have a similar issue. Whenever I try to import furniture (e.g., an OBJ file exported from SH3D earlier), the app freezes on the second page of the import dialog where the four preview images are shown. I can reproduce this every time. I'm running the latest version (see below) on an Intel Mac running Big Sur (11.2.3 (20D91)).
Adding
java-options=-Dcom.eteks.sweethome3d.j3d.useOffScreen3DView=true
does actually get me to the third page and then it freezes.Any ideas?

I have exactly the same issue as Dennis , with the following difference:
I am currently running on macOS Catalina (version 10.15.7).
When I add the option
Adding java-options=-Dcom.eteks.sweethome3d.j3d.useOffScreen3DView=true
, I cannot start my SweetHome3D anymore.SH3D version information:

From what I understand at the moment, a deadlock may happen for a few macOS users with JOGL 2.4.0 RC 20210111. If needed, you may use this version based on Java 15 and JOGL 2.3.2 where the bug won't happen, but under Mac M1, it will run with Rosetta 2.
The version 6.5.5 released in the Mac App Store two days ago should fix your issues under Intel.

The free version 7.0.2d and the Mac App Store version 7.0.7 fixed the bug in the furniture import wizard.
About issues when saving a SH3D file on OneDrive or iCloud, you probably have to grant Full Disk Access to Sweet Home 3D in the Privacy settings of System preferences.
