In contast to the stellarium_user_guide the actual ngc2000.dat is not an ascii
text file.
It is a binary file, so you have to use a binary Editor for changing them
(Notepad++ has
an add-on for this, if you use Windows, for Linux use hexedit).

I'm not sure that's what you want though. If I may make a gess, I think what
you want to do is edit or add new stars to it, the best whay is to take a look
at the NGC catalog website.

I've downloaded notepad++ but nothing to do, characters are not readable... :(

Quick edit: Try NGC2000names.dat, it sould be in ASCII.
