This is one of the areas we're going to try and improve in the upcoming preview2 release (http://opensource.atlassian.com/confluence/spring/display/WEBFLOW/Change+Log). You can already take a look at the class AbstractFlowExecutionTests, but I haven't used that one myself yet so I can't really comment on best practices or anything like that.
