My 2c contribution : I have been using hibernate 3.0 rc1, and a custom spring snapshot from HEAD since the http://opensource.atlassian.com/projects/spring/browse/SPR-300 patches were comitted to HEAD - the for the last 3 weeks - without any issues - in production sites. One site being an ecommerce shopping site http://www.chemistaustralia.com.au/ which uses the Criteria API a lot, and the other http://www.drivenow.com.au/ a last minute car hire site which makes heavy use of HQL. Both the spring project and hibernate have a very high standard for their pre-releases.
