Using an AtTiny85 as a current sensor through an ACS712 current sensor that creates an analog voltage representative of AC line current. The input pin on the AtTiny would get the varying voltage, and the output amperage would come off of the MOSI/MISO pins. So can the simulator produce the varying voltage to test the input and analog to digital conversion to an output value?

If i understand correctly you need a sine wave voltage signal.
If that is the case you can use the component "Wavegen" In "Sources" group.
