I've seen a lot of posts about adding files to pre-existing password protected 7z's, but nothing about adding password protection to previously un-protected 7z's. For instance, if I have a regular 7z with several docs in it and I decide I want to put a password on the archive, is there a way to do it without unzipping/rezipping everything in it?

No, but you can try like...

        7z u archive.7z -mhe -pPASS -uq1 -x!*

    EDIT: just update existing archive
