The "ssp" option does not work with parameters for compression in GUI version (7-Zip 21.01 alpha) !!!
Please correct this error
The new -ssp switch. If the switch -ssp is specified, 7-Zip doesn't allow the system
to modify "Last Access Time" property of source files for archiving and hashing operations

It's not error. It's missing of feature.
The Parameters field defines only -m switch things that are sent to archive handler (7z/zip). -ssp is option of client at another level .

Igor, there is enough space to add more than one option to the "Add to archive" dialog window. I have already proposed such a solution in August 2020 in topic 7-Zip 20.02 alpha
Changes are in red rectangles, some explanations:
1. Change "Parameters:" to "Compression parameters" - to precisely define the proper use of existing field.
2. Add similar edit field for other parameters.
3. Add box to select or add user-defined compression profile. You don't need to provide tools to create such profiles, just add description of a profile to Help.
