Can you find out specifically which test hangs, as this may help to pinpoint the problem better. I'm mostly testing with 5.0.5 on Linux so I doubt that this is a problem with insufficient buffer allocation. Maybe the limb size is different in OS X? I don't have a Mac so I am somewhat blindly guessing here. What happens when you skip the test to complete the build and initiate the sb-gmp tests afterwards? Since Paul had no problem with 5.0.2 I checked the Changelog from 5.0.2 to 5.0.5 but didn't find anything that should cause this.
