I'm searching with google but I don't found any example for a windows legacy menuentry that works ...
(hdbios works, but I want to customize the entry)

I'm afraid that rEFInd doesn't currently support manual boot stanzas for BIOS/CSM/legacy boot loaders, so you can't do what you want.
