I have transferred to a new company, and I could not bring my historical data or PSP materials with me. I don't have my old numbers memorized. What would you recommend as the fastest way to simulate/generate data to help me in my estimates?

If you had been able to bring your data with you (by choosing "C > Tools > Save Data Backup"), you would have been able to continue at a new place of employment without losing any personal historical data. The dashboard was designed to support that type of data portability, where you aren't tied to a server owned by your old employer.
When you're unable to bring historical data with you, the next best thing would have been to have saved or printed off a copy of the "C > PSP Data Analysis" report. With the resulting numbers, you could at least create an "Import PSP Data" node in your new personal dashboard, enter the historical time/defects per phase, and allow those numbers to be used as you create plans for new work.
But since you weren't able to bring your data with you, and you don't remember any of the numbers, I don't see any option other than to start fresh and begin building a new set of historical data from scratch. This can be discouraging, but as soon as you complete a work item or two, the data from those completed tasks will be used to help create the plan for the next work item. Good luck!
