That's not an option IMHO - dovecot 1.2 is too new (released 2009-07-01) to force users to upgrade. The upcoming openSUSE 11.2 will come with 1.1.7 [1], and the usual rumors say it will take years to get 1.2 in debian stable ;-) Another important point is that postfixadmin aims to always be backward- compatible. Removing support for dovecot 1.1 would break postfixadmin for several users [1]...
