I am on oxygen os 16 with gboard haven't faced this issue. Still recommending you to download latest v2.7.1 build and give it another try

Yeah I tried v2.7.1, still the same issue. If you notice carefully in my recording, the keyboard pushes the continue button upwards above the number input, which I think causes it to dismiss itself. (I don't see this behavior in your recording)
Anyway, I got around by setting "Display Size" to Small (from Standard) via Settings > Display & brightness > Display size. But it is not an acceptable solution.
The app is beautifully designed, I have to say. But the spacing, font size etc. feels off on "Standard" display size setting. It is as if the app is intended to be used in "Small" display size for optimal experience. Not a deal breaker though.

And for onboarding add wallet page tried on different Android( iQOO,Samsung) didn't have any issue.
Lets see if any other user create the same issue ill look into it
