With VMWare, we will typically mount a CD Drive as an ISO image so we can boot Windows and install the OS or to restore a backup image to the mounted hard drive. Is this possible wit openqrm?

yep :) just add a dedicated datastore for the ISO images to the ESX Host via the datastore manager. Then when creating a new VM you can use the file-picker in the create form to select an iso which will be attached.
For KVM additional you can (in the latest version) attach a second CDROM which is very handy for Windows installation to have the Virtio-driver ISO image available on boot time
Not sure if you know but with virtio drivers installed the Windows OS gets really fast in KVM.

Since virtio is "just" an OS thingy there is no special documentation for openQRM.
