I'm a newbie on OpenNLP, i use on my project and has implement some methods of
openNLP on it. My question is about Apache UIMA, a several people has told about uima but I don't know anything about it. Why I will use apache uima on my project ? My project is a data mining on one social network. UIMA will be good for me ?

You can use UIMA to build an analysis system with a complicated work flow which can also scale to many servers. UIMA does not offer any analysis itself. It is a framework which can integrate many analysis solutions like OpenNLP or others.
What kind of analysis do you need ? Maybe you can describe your task a little more precise.
