I know im being dense here but I have searched the net, I have gone through the settings roughly ten times over in each category and for the life of me cannot find out how to stop this issue.
Every single photo I take comes with an additional saved video- a "live photo" I guess. It's not a bad feature, i just want to choose when I want it & its driving me insane right now.

Go to Settings > Shooting Interface > “Show preview shots icon,” turn it on, exit Settings, and uncheck the circle with the small circle inside on the left.

Thanks to the other poster for giving the answer. Just to add, there's also Settings/Photo settings/"Save preview shots" (i.e. turn it to off) if you don't want an on-screen icon.
I'll add some kind of indicator when this feature is turned on, as it currently isn't obvious (if one doesn't have the preview shows icon enabled).
