Symphony sadly is closed source, and based on an old version of OpenOffice to boot. Yet Symphony's interface is considerably nicer than OOo. Office 2007's interface looks nice, though people can't agree if it an improvement over Office 2003. I think once you learn it, in many ways it is nicer. However, OOo's interface sadly is old and traditional.
Instead of the ribbon, I'd like to see large tabs like the Symphony screenshots that highlight the most common tasks/features you may look for at the moment based upon the task you are performing.
Symphony has nicer side-bars, dialogs, icons, color theming, etc.
Symphony is closed-source, and I'm not suggesting anyone directly copy them, but certainly one could use them for inspiration to greatly improve the OOo interface.

IBM is connected to OpenOffice.org's shish. I hope one day they make available these stuffs. I asked them for cliparts quite before but they didn't answer at all. Implementing such interface would be nice but Symphony is so slow. Currently we are tweaking current interface and not to introduce a new one. Of course any contribution is welcomed, but I am not sure f we have enough resource to archieve it soon.
