I highlighted several lines of text, did CTRL-F, entered the text I wanted to search for, enabled "In selection", clicked on Count button. It returned the total instances of the search term, that is, it counted how many there were in the whole document, not just in the selection.

  I found the same thing. Replace, however, does keep to the selection.

Is there a way to do a Find "Count" within the selected text? Simply checking "In Selection" in the Find dialog, with text selected, does not do it.

I recently emailed Don about this, which I had found out on my own. I was askig him whether this was a bug or a feature. I haven't get a reply yet.
