Is there any way to use Tabacco digital maps so that they can be managed by MOBAC ?
I'd like to be able to use them with Alpinequest.

I don't think these maps are available as tiles served by a web server. (If they are, I didn't find this server, and Tabacco website do not mention it).
This would be a requirement to be used with MOBAC...
So the answer to your question is (very likely) NO

Anyway, I guess it would require some development to transform their current format in MBtiles format.... provided it is feasible, ie. provided these maps are actually made of tiles, and are not encrypted....

It looks like OutdoorActive Pro had some similar maps of the Dolomites, Sud Tirol, and Trentino area as Tobacco. But i don't know who's the actual provider of these maps.
Unfortunately, OutdoorActive (Pro) doesn't work anymore for MOBAC, since summer (my last successful use was in March 2025)...
For SudTirol and Trentino, there are the Kompass Rando maps available as alternative for MOBAC, but lower quality compared to Tobacco.

About OutdoorActivePRO, I guess there is a "key" in the source file, and this key correspond to a recently (between March and today...) expired account...
Anyway, the main advantage to have a very few number of quality maps in Italy is that, likely because there is a need not satisfied, OSM mapping is of very good quality, and very complete, more than in other countries... And a large number of tiles "renditions" give a wide choice. Or with its mapsforge format maps (eg the Andromaps package) and their very various "themes", it's quite easy to get very good quality maps for Italy.
And we mustn't forget the excellent Bugianen and Srbetto maps of Maki, for the western italian alps : https://tartamillo.wordpress.com/bugianen/
