If you are into ibutton then you might take a look at the tini from Maxim-Dallas, they have an interesting application note that seems to fit your requirements and as you are already planning on running cat5 then the wiring should already be there. http://www.maxim-ic.com/appnotes.cfm/appnote_number/609 http://www.maxim-ic.com/appnotes.cfm/appnote_number/3266 They also have a number of notes on networked switches using the same microcontroller, http://www.maxim-ic.com/appnotes.cfm/appnote_number/2036 I have not used these but I have a number of 1-wire sensors about the house.
