"Refresh this Show from .nfo" is a process that should touch the NFO in any manner other than READ ACCESS, yet it recreates all the files with creates, modified and access times all updated for all nfo.

I checked, and MC will only write to the nfo, if there is something important missing, like the showID, and a couple of other specific fixes required.
If you did this again in a couple of days, you'd probably find the nfo's are not altered again as they are now fixed.
Remember, If a bug is introduced or some data formatting was fixed, MC will rewrite the nfo so it is correct.
It seems you may be right :-) I'll keep an eye on it.

It happened today on MC v3.7.5.5 but with "match this show as watched".
I have attached a zip containing the files, the contents of which don't differ (so nothing was missing)
Yes, it should touch episode nfo's. I just confirmed this occurred on a Mark show as watched.
Will fix this for the next release
Actually I got this wrong.
If you Mark this show as Watched all episode nfo's are rewritten with <playcount>1</playcount>
If you select Mark this show as Unwatched , all episodes are rewritten with <playcount>0</playcount>
so if you select a season and Mark season as Watched all episodes within that season get <playcount>1</playcount> and vise versa if set to Unwatched
This is correct operation of Media Companion.
Both nfo's you supplied show playcount as 1.
