Well ... you've modified your Geoserver config (esp. the Tasmania related stuff) so the problem could be quite hard to find. You should probably start over with a clean Geoserver config. The unmodified wfs-t demo should work with that clean Geoserver (just tried editing one of the coordinates of a Tasmania road and saving it and that simply worked). Then add a new FeatureType/DataStore/Namespace etc. for your own features in Geoserver. Copy the wfs-t demo to a new application directory and make the modifications for your features there.
