Whatever I do (reinstall, audio configuration ...) my system (Mac) is sending on both input channels, but only one channel (L) is heard when connecting to a Jamulus server (see attached image).
I think you're mistaken. What I see in your screenshots:
Jamulus is configured for LoopBack as input, channels 1 and 2
Jamulus is configured for your Scarlett audio interface as output, channels 1 and 2
When you play, the Jamulus client is "hearing" and sending channels 1 and 2, as shown by both level meters on the left side of the window
From the server, you're receiving a stereo signal, as shown by the presence of a Pan button above the level meter for user No Name
So if you're only hearing audio on the L channel (in your headphone), you need to check the Scarlett configuration to ensure that both channel 1 and channel 2 are being sent to the headphones.

Thanks Chris - I was not exactly precise, sorry. I do hear both channels in stereo in my headphone. I was playing around with the Pan settings in a session with the help of others now using a 2/3 to 1/3 Pan setting and sound seems to be better balanced now. Maybe this is how Superior Drummer 3 sends out on the channels with Toms, Bass being more dominant than a HiHat, left Cymbal etc., which could also explain why I had to increase the HiHat volume massively in relation to the other instruments.
