In many DAW type applications you can quickly double-click a fader or pan knob to return to a nominal value of say 0, for a fader, or center - for a pan. I realize we are not dealing with finite mix levels ( I wish we had a 0db and some +3/-3 etc marks on the mixer) on the mixer -- but maybe we could call 80% nominal and have a double click send the fader there. I believe this would make managing the mix a bit easier when jamming and don't have a lot of free hand time.

    Thank you,
    Chris

This has already been worked on and will be available in the next Jamulus release: https://github.com/corrados/jamulus/issues/707

Thank You Volker. looking at the issue, will this cover mix volumes as well? I believe this type of feature should be for any audio control in the mixer.

We do not have exactly what you were requesting for but something similar. It is a new menu item called "Set All Faders to New Client Level". The idea is that if, e.g., on the Worldjam a new band enters the server, this menu item is used to set all the faders to, e.g., 80 % and then there is some headroom above each fader to go up a bit.
