Several companies have de-bayering algorithms and software, like classic Canon or Nikon imaging programs. Those won't help you much since they're limited to photographic cameras and scanners. Other more exotic companies like Phase One and other digital back manufacturers have their own softs and may be willing to add some code to allow you to process your raw files. The de-bayering code in libdc1394 comes from dcraw and personal implementations from web and scientific articles. At last, YUV will lack color resolution compared to a decoded RAW image. However, the camera may perform some extra processing to get rid of the zipper effect.
