Maybe I'm blind but I can't find an option to hide all expired entries.
(I can show them, I can search for them, but I can't hide all the expired entries).

What can I do to stop showing expired entries by default?

You can't, but you can move them to a sub-group.

Hiding any entries is bad because you may not remember you hid them and then think they are lost.

I use the expire dates to enter renewal dates for sites like online backup or virus product that will renew and charge my credit card. I can then sort by expire date and see what stuff is coming due. Obviously, I don't have real password expire dates.

This is not possible in Kee Pass itself, but you might want to try this plugin of mine.
It indicates whether an entry is expired or will expire soon by showing specific icons and background colors in the entry view.

You can also decide to not show expired entries at all.
In this case the statusbar will inform you how many entries are not shown because they are expired.

You can toggle display of expired entries by clicking the toolbar button or by using the shortcut that can be set in the options.
