A way to hide (using asterisks) for example the notes (Standard-Field) of just specific entries. From my understanding it is only possible to toggle the asterisks for a Field in general.

You can do it in the main view via View > Configure Columns.
But this does not hide the Notes when you select an entry.
You can't really hide the Notes so you should use a custom field if you want the data hidden.

I am aware of the option to hide the Notes Field in general via View > Configure Columns and then hit the Checkbox at the bottom. My wish is to hide the Notes just for one entry of my database e.g. one account (Username, Password, etc.). The option to generate a costum field for these entries creates the need to display one more column in the General View, which i don't really want. Maybe i am missing something ...

The notes field is not an optimal location to store structured data, e.g., username & password. String fields are preferable. The KeePassEnhancedEntryView plugin adds a convenient means to create, edit, view, and use custom string fields in the Entry View pane of the main KeePass window.

Go to the toolbar Settings to do just that
You can do it in the main view via View > Configure Columns.
