On double-precision, my own view is that since the JSON spec does not
specify a precision, infinite is fine, so I would like to store numbers as
strings and allow the caller to convert on-demand. The existing APIs would
still return floats, but higher precision would be possible, in addition to
variable-length integers. You could open an Issue at GitHub.
Is there a way to change the double precision when writing out?

Not yet, but we are considering something that could help you.
What is the current state on this?
