I've been away from coding for a while, so my input could be dated. I wrote an app called QtJSBSim https://sourceforge.net/projects/qtjsbsim/ That uses UDP communication with JSBSim. This may have some ideas in it that you could use. My understanding is that you can have multiple input and output sockets, but each will need a different port. I don't see how sending data from separate apps to a single UDP port read by JSBSim will work. JSBSim expects the data received at a port to have a particular structure, so it can't be made to read a weather data set and a controls data set at the same port. You would have to combine the two data sets before hand then send it to a single port.
