There is nothing to "uninstall" since HexEdit is simply a single application. Just delete the application (and maybe the preference file if you really want to be complete) and that's it.
The reason for the continued association is due to the Finder's caching of the HexEdit application ID and it's associated data file information. See this FAQ for more info:
How do i uninstall HexEdit completely ? I deleted the programm but the pentacle icon keeps showing up once in a while (for instance at DMG files).
