What framerate and resolution are you looking for? I have been able to stream video by running a small app on the gumstix that reads from /dev/video0 and saves a single frame to a ramdisk as a jpeg file. Then I use socat to transfer this jpeg file when the client asks for a new frame. I only need to "monitor" the video remotely as my robot is the one really using it. This method is very light on system resources, but I only get 7 fps so I'm sure there is a better way. But if this looks like it will meet your needs how to do this much for sure.
