A preset not only includes the search/replace string but also all the settings you've made (e.g., search hidden files, file masks, ...).
That's why there's no "edit presets" dialog.

Select the preset you want to edit, click OK.
Now edit the strings and settings in the main dialog. Then click "Add preset" and use the same name - the preset is overwritten with the new data.
