Ben, some possible workarounds. If you don't have AquaTerm installed, you should get it. It is the preferred way to see gnuplot output on a Mac. With this installed your gnuplot output opens in Preview.app and you can export to other formats. If you have OS X 10.3.x, you can also use GraphicConverter to change plot formats. You can find info on AquaTerm at http://aquaterm.sourceforge.net/ and a .dmg installer can be found there also, so no build is necessary.
