You can plot functions with as many arguments as you like, but of course, only two of them will be variables (in an splot).
The development version supports one more dimentionsion, but only for datafiles: you can control the datapoint colour by a datafile column.
If you need more, you'll have to switch to other programs. Vis5D, openDX and/or vtk are some of the candidates.

I forgot to tell you that i don't use gnuplot very well, so can you give me some informations in order to plot a 3 variable function
