The WMS Capabilities autoconfig module works by creating a new, non- persistent gridset for each combination of layer and advertised CRS except for WGS84 and Spherical Mercator It completely ignores the defined gridsets when doing so. It looks like something is going wrong with that and it's either not succeeding at creating the gridset, or it's not finding it after creating it. I was working on improvements to the way this works so that it would look for existing CRSes, define them based on the CRS extent of validity, and allow for specific gridsets to be specified as the preferred ones to use. It needs a bit a clean up before it will be ready to add to master (which I haven't found time for) but you could try building it yourself to see if it solves your problem.
