I will have to check. The renderer code is still evolving, and I'm not sure if it is ready for image layer at this time. For now, I use image in Geotools 2 mostly for computational purpose. Loading a Geotiff image is an other issue. There is free software for loading Geotiff images, but GridCoverageExchange do not use it yet (I just didn't had the time to do the connection yet) I think it would be a good idea to post yours question on the geotools's developper list. There is some peoples around who have a better knowledge than me for some aspect. For example, James McGill would give you a more accurate answer about the current state of the "renderer" module.
