Hello and welcome to Geotools, Unfortunately, as you have found, the documentation is a bit of a mess. I'm working actively on fixing things but they are not there yet. Also, I am getting distracted by a whole bunch of infrastructure work that needs to happen. Check out the demo directory. It has a brand new set of examples (demo/example) and has an introduction (demo/introduction). That may be enough to get started. After that you can get online and download as much of the website as seems interesting to use offline.
