I'd like to try out the PIC MCU's Configurable Logic Cell functionality (on a low pin count supported device). Is GCB able to do this and are there any examples? Thanks.

There are many demos in the demo pack for CLC. From GCCODE, press <f4>, select CLC v4 Designer. Lots of CLC demos on my YouTube channel. T hese resources are a great start.</f4>
