What I was trying to do was present the user a screen to enter data that would be inserted into the an entity in the database. There are defined default values in the data base definitions in the entity class files.
Rather than storing default values in two places (one in the database definition tags and one in the code as constants) I wanted to only store in one place (reduce the maintenance risk by only changing it in one place) and retrieve the defaults from the EntityInfo structure.
With this change, I can create a new entity and retrieve the default values without saving and retrieving from the data base.

I realized that accessing the default values fron the Entities.inc file was more important than actually initializing the values on creation. This version of the uploaded proposed patch exposes a getDefaultValues method on the GalleryPersist.class. It will still initialize the values on creation.
