I don't see anything obvious why it shouldn't work, but also loopback over fuse is not "supported" in the sense that it is known to have deadlocks (may not happen under normal circumstances, but last time I looked it was definitely possible). But fs corruption with this setup is something I haven't yet looked into. If you want to investigate, you can try to replace sshfs with fusexmp (a simple passthrough fuse filesystem found in the source tarball) to exclude issues caused by sshfs.
