Normally, while editing node text, if I press Enter key, we exit edit mode. It worked earlier that way. Now, for some reason, it is creating line breaks and remains in edit mode. Usually, this is supposed to happen when we press Shift+Enter. Not sure why that same behaviour is happening on pressing Enter itself.
Any hints how to regain default behaviour of Enter key.

Have you tried going to Tools -> Preference -> Behaviour tab -> And see if Enter Confirms by Default is checked? If not, can you check and see if enter will finish editing instead of creating new line?

The only equivalent behavior I've run into concerned keys that were physically sticking or key / key combinations that had gotten remapped.
Is this behavior unique to Freeplane?
I wouldn't think any program would remap Enter. But in Freeplane, you can see the key mappings from the menubar: Help > Key reference.
Hopefully, someone will post a better answer soon.
