Could someone tell me how I get print preview in landscape orientation?
(and where I find theat information in in the freeplane documentations)

Probably explains why I didn't get notified about your reply! That's the trouble with arriving via search results rather than some forum with a big "DISCONTINUED" notice on its front page. (I see that word does appear in the browser tab of this page, from the html title; noticed after I'd posted.)
File->Print map…->Print setup…
That only produces this scaling dialog, not a way to change between portrait and landscape orientation.

file > print setup
make whatever changes you want in the dialog > click OK
2nd dialog > landscape
Next time you print it will be in landscape, as will print preview.
And in 2022?
There is no file > print setup now.
Using latest preview version (1.10.2)
File->Print map…->Print setup…
