I'm curious as to how I can change the time zone for the date/time . I can't find anything about it on your website, so I thought I'd directly ask you for help.

What exactly do you want? Is your server running on a different timezone than where you live? So the timestamp is off by an hour or two? Might be easy to add something to fix that...
