I'm interested in montoring traffic only between specific nodes/links on my networks (for eg. I'd like to monitor traffic between all the switches in our network). How can I specify filters to accomplish my goal. Any/all suggestions would be very helpful.

In response to your question, the etherape filters are the same, or at least very similar to tcpdump filters. Try doing a "man tcpdump" to see a large number of options available and just enter them as-is in the filter menu in etherape.
