If I answer an encrypted mail, the options encrypt and sign are checked by default according to my OpenPGP-Settings (encrypt and sign always when answering an encrypted and signed mail). Although those mails are stored unencrypted and unsigned in my Sent Messages folder, and they reach the recipient unencrypted and unsigned, too.

I found out this is because of a recipient rule, which overrides those settings. Unfortunately this is not displayed early, so I assume the mail will be encrypted, but a later process refuses this.

You should see + and - symbols next to the sign / encrypt icons in the lower right corner. The "-" symbol indicates that a rule will disable signing (or encryption) and the "+" indicates that a rule will enable signing or encryption.

Yes, I see them ... now. It's quite inconsistent to have the check marks in the menu and on a different location I can get other information. I'ld recommend to think about this visualization issue.
